this is a quick talk on how to use the La Pavoni Lever Machine. Before turning on the machine, unscrew the boiler cap. [Music] Fill the water up to the top of the sightglass. Secure the boiler cap back on. Turn on the machine. Take this opportunity to grind your coffee beans while we wait for the machine to get up to temperature. Take your portafilter and drop in the grounded beans. Distribution is important. Using tools such as this Distribution tool helps with consistency and even extractions. One firm leveled tamp is all that’s needed. Purge the group head, wipe the shower screen, and lock the portafilter back in. Slide a cup under and lift the lever up to the top. once the group head has filled up with water, you can begin the extraction process by pulling down the lever back to the default position. For cappuccinos, fill 1/3 of a small frothing pitcher with milk. Open up the steam knob with th tip just under the milk’s surface. The goal is to get the milk rolling without hearing loud screeching or excessive bubbling. After steaming, swirl the milk around and tap the bottom of the pitcher on the table to get a smooth and silky texture. Combine the espresso and milk in a cappuccino cup and enjoy!
