Hello, my name is Marina today I will give you some tips about how to get the perfect espresso for it we will be using the new Dalla Corte Studio. Let’s start with grinding. To grind finer or coarser will affect the result in your cup To grind finer means to extract more if your coffee has a lack of body or flavours complexity grind finer To grind coarser means to extract less if you feel your coffee is too bitter, grind coarser Doses on the portafilter It doesn’t mean that the more quantity you put into your basket you will get a better result Different recipes, for different coffees About the recipe normally you will find the best results in a 1 to 2 proportion This means if we grind 16gr of coffee the best results will be 32 gr in a cup Having more control weighing your coffee will make a big difference in taste To know if your dose is right, Dalla Corte had created the coffee caliber Tamping and distribution: You should distribute homogenic and tamp straight to make the coffee cake compact unless you want the water running through the coffee cake superfast extract always by the same place giving you a tasteless result. Channelling If you put too much coffee or your tamping is not even water opens its way creating “channels” your coffee may taste bitter lack of complexity if that happens Extraction time Traditionally it was been between 25 and 35 seconds this will depend on your coffee recipe by this I mean grind size and quantity It’s the same with the perfect amount of coffee in your cup originally it was 25 ml for a single espresso but it all depends on your recipe. Over or under extraction In an under extraction: you will find salty and sour flavours to fix it you will need to extract more grind finer or pull more coffee into your cup. Over: you will find bitterness and lack of complexity in general you will need to grind coarser extract less or in a shorter amount of time Water make sure the water you are using for your espresso is not too hard it will add extra undesirable flavours too soft, it will be tasteless That’s what I’m talking about.
